Although the olive tree is a very rustic tree, it requires a lot of attention and care to have a constant quality production. Olive trees require fertilizing and pruning. The harvest is an intensive high-labor work to be done every year between October and November.<\/p>\n

Considering that the olive fruit is small (1\/2 grams), that we cannot hire people (we would not have any profit) and that the harvest is made by hand, the efficiency of the operation is greatly reduced and consequently, the cost in terms of labor and time is high.<\/p>\n

To get an extra virgin olive oil of excellent quality, the olives must be healthy and therefore must be picked with the maximum care to prevent bruising, crushing, mold or fermentation.<\/p>\n

The harvest is made by spreading large nets (10 meters x 10 meters ) under each tree (we have 700 olive trees!) and shaking the branches with a professional electric tool that makes olives fall onto the nets.<\/p>\n

So even under the best conditions \u2013 good load of the tree and large fruit size \u2013 an average harvest is no more than 30-40 kg\/hour.<\/p>\n

Our olives once picked, are kept in ventilated crates and taken to the mill every 48 hours to be pressed. In order to get a high quality of extra virgin olive oil, the shortest is the time between picking and pressing the best it is.<\/p>\n

We bring our olives to the mill the same day of the harvest.<\/p>\n

The mill we have chosen has innovative technology so that olive paste is worked in absence of air and at a cold temperature (around 20\u00b0).<\/p>\n

The result is a more long-lasting olive oil full of nutrients. At the sensory analysis is ripely fruity, bitter and pungent with a prevailing aroma of almond and light notes of freshly-cut grass and artichoke.<\/p>\n

We cultivate our garden according to the principles of agroecology and Biodynamics<\/strong>.<\/p>\n

Infact our aim is to enrich our soil and we do it using mature animal manure and biodynamics preparations like the 500 P and 501, we organize crop rotations and sow green manures.<\/p>\n

We strive to maintain a high level of biodiversity<\/strong> that is precious for our health and it’s the best solution against climate change: we grow many different varietals – mainly native – plants in our garden in order to develop positive sinergies that naturally fight pathogens like viruses, bacteria, fungi and harmful insects.<\/p>\n

Tillage is reduced to the minimum, superficial and carried out at the right times when the soil is at its best . To reduce plant transpiration and use of water we have adopted drip irrigation and we cover the soil with grass cuts, biodegradable materials and green manure techniques.<\/p>\n

Every Monday afternoon from May to December we are at the farmers’ market of Figline Incisa Valdarno in Piazza Polonia parking lot, come visit us\u2014you’ll find plenty of excellent local products!<\/strong><\/p>\n

Poderaccio farm is also an agroforestry company, there are 35 hectares<\/strong> of sustainably managed forest from which we obtain biomass<\/strong> for heating in the winter season and wood for construction and rural works.<\/strong><\/p>\n
